Breakfast Casserole

INGREDIENTS :
1 package(s) real bacon pieces
1 cup(s) chopped onion
2 cup(s) cheddar cheese
shredded
1 1/4 cup(s) Swiss cheese
shredded
4 cup(s) frozen hash brown potatoes
shredded
1 1/2 cup(s) small curd cottage cheese
6 large eggs
3 tablespoon(s) oil
- salt and pepper
to taste

INSTRUCTIONS :
Let hash browns thaw. Preheat oven to 350 degrees. Heat oil in skillet and cook onion until tender. Add package of real bacon pieces last few minutes of cooking. Pour in a large bowl. dd thawed hash browns to onion and bacon mixture. Add cheddar Swiss cheese and cottage cheese. Mix well. n a separate bowl beat eggs lightly with fork. Add to mixture. Add salt and pepper to taste. ransfer to a 9 x 13 pan that has been sprayed with non-stick cooking spray. Bake at 350 degrees for 35 minutes.
