INGREDIENTS :
1 cup(s) cubed mango
1/2 cup(s) sugar
2 tablespoon(s) 1 teaspoon cornstarch
- pinch of salt
3 - eggs
13 1/2 ounce(s) coconut milk
- toasted flaked coconut
1/2 cup(s) sugar
2 tablespoon(s) 1 teaspoon cornstarch

INSTRUCTIONS :
Combine sugar cornstarch and salt in a medium saucepan.nnAdd eggs and coconut milk and beat until well mixed.nnCook over medium heat whisking constantly until pudding thickens about 3 to 4 minutes. If lumps form turn heat to low and whisk vigorously until smooth. emove from heat mix mango into pudding.nnPour into serving dish. Cover and refrigerate until cool. ecorate with toasted coconut.nnEnjoy
