Cranberry Goat Cheese Spread

This is a different type of spread recipe if you're a fan of goat cheese. The flavor of the cheese is mellowed out a little by all the other flavors. The tangy vinaigrette is a perfect complement to the goat cheese and cream cheese. Tart cranberries and nutty pine nuts in each bite are little bits of yumminess. At room temperature, the texture is similar to hummus. We tried a few crackers and preferred the Melba toast. A sweeter, buttery cracker is also a great option. It's an unusual appetizer recipe that will be a delicious start to a holiday dinner.

INGREDIENTS :
1/4 cup(s) pine nuts
4 ounce(s) chevre (soft goat cheese
usually sold in a log shape)
3 tablespoon(s) plain cream cheese (about 1.5 oz)
1/4 cup(s) dried cranberries
3 tablespoon(s) balsamic vinaigrette salad dressing (store-bought or homemade)
1/8 teaspoon(s) salt
- freshly ground black pepper to taste
4 ounce(s) chevre (soft goat cheese
usually sold in a log shape)
3 tablespoon(s) plain cream cheese (about 1.5 oz)
1/4 cup(s) dried cranberries

INSTRUCTIONS :
Toast the pine nuts. Place on a sheet of aluminum foil and roast in a toaster oven or regular oven at 300 F for about 2 minutes just until nicely golden brown. Remove. lace toasted pine nuts and all other ingredients into a food processor. Process until mostly smooth. lace in a pretty serving dish. Serve immediately or refrigerate which will thicken spread somewhat. erve with crackers Triscuits slices of cocktail bread Melba toast or cut up veggies of your choice.
