Mom's Fresh Banana Cake
NeedTaste |My mom made this recipe 100's of times while growing up. It is so moist and good. Her secret was in the bananas. The night before she went to make this she would put 3 or more bananas in the blender and puree them. Then she would let them sit all night in the refrigerator, sometimes two nights. The banana puree would be dark and fruity-smelling. She would add that to the cake batter and her cake would be perfect and moist every time . Letting mashed bananas sit overnight enhances the banana flavor in this easy to make cake. It has the flavor of banana bread, but a texture more like a carrot cake. We loved the cream cheese frosting on top. Tangy and sweet, it's perfect with the banana cake.

INGREDIENTS :
2 cup(s) all-purpose flour
1 1/2 cup(s) sugar
1/2 cup(s) butter or margarine
3 large bananas
2 - eggs
1 teaspoon(s) baking soda
CREAM CHEESE FROSTING
1 package(s) cream cheese
softened
3 oz
1 tablespoon(s) milk
1 teaspoon(s) vanilla extract
2 1/2 cup(s) confectioners' sugar
1 dash(es) salt
1 1/2 cup(s) sugar
1/2 cup(s) butter or margarine
3 large bananas
2 - eggs
1 teaspoon(s) baking soda
CREAM CHEESE FROSTING
1 package(s) cream cheese
softened
3 oz
1 tablespoon(s) milk
1 teaspoon(s) vanilla extract
2 1/2 cup(s) confectioners' sugar
1 dash(es) salt
INSTRUCTIONS :
Pre-heat oven to 350 degrees. Puree the bananas and let sit overnight. You may use them immediately but the overnight sit ripens the bananas to perfection. dd baking soda to the pureed banana mixture. Set aside. ream sugar and butter. dd eggs one at a time. dd flour slowly. dd banana mixture to the creamed mixture. Mix just until incorporated. DO NOT OVERMIX. our into a greased 13x9 pan. ake for 30 min or just until golden brown. Be careful not to over bake. or the cream cheese frosting blend cream cheese milk vanilla and salt. Gradually add powdered sugar beating until frosting is smooth and creamy. Check that it is of spreading consistency. If too thick add another 1 tsp of milk until it is the right consistency. rost the cake. Sprinkle lightly with chopped pecans.
